The business. Square deducts the processing fee before settling funds, so a £100 in-person sale on a UK card pays out £98.25 at 1.75%. Since January 2018 UK businesses cannot add a surcharge to consumer card payments, so the fee is absorbed into your pricing rather than charged to the customer.

Why did an invoice payment cost 2.5% instead of 1.75%?

Because Square prices by channel. The 1.75% rate applies to in-person card payments; invoices paid online and keyed-in payments are charged at 2.5%, and online checkout payments at 1.4% + 25p. The same customer can generate three different fees depending on how they pay.
